Explain the controls. And the big silver knob in the middle. It does have grip throttle I see.

In 1929 there were not knobby tires , were there?

The big silver knob on the handlebars should adjust fork stiffness(someone correct me if I'm wrong).
Hand clutch, hand controlled rear brake(no front brake). The silver lever on the right side of the bars is ignition retard/advance for ease of starting, idk what the switch on the metal brace above the tank does.
