I believe is depends on the kind of cheese.
Parmesan & Manchego - these are clearly designed for track and racing.
Emmentaler is better for ADV riders
American: a bit heavy and slow. High in heritage and not known for performance.
Stilton: while it's been around forever, its doing a great job blending nostalgia and performance.
